Ever since I moved to the United States eleven years ago, I’ve been fascinated by the ways of celebrating various national holidays around here. The 4th of July, like other summer holidays, are particularly appealing because of their laid-back vibe of family gatherings, cookouts, watching fireworks, etc. Rob and I usually spend this day together, and while there’s no need to cook up a storm just for the two of us, we still try to indulge in the traditional American cookout fare like hot dogs and hamburgers. I’m always fascinated by how people find my site through searching for various things online. The other day someone searched for ‘vegan foods in microwave’, and it got me thinking. As someone who was born and raised in Russia, I’ll admit that borscht was as big of a staple in our diet as some of the Western stereotypes about Russia may paint it. Every family had their own cherished recipe that was followed religiously and made at least every other week year round. Even though the main ingredients usually stayed the same (beets, cabbage, potatoes), other components added to borscht often varied from family to family.
