Interview with Melissa Johnston – a Vegan Pacific Crest Trail Hiker and Author of Forest Filth Blog

Hi all! Today I’m thrilled to bring to your attention my interview with Melissa Johnston – a vegan adventurer and author of the Forest Filth blog and the popular @forestfilth Instagram account who has recently finished the thru hike of the legendary Pacific Crest Trail (PCT). At only 19, Melissa planned out her journey to cover the entire 2650 miles of the trail spanning from Mexico to Southern Canada, and successfully completed it by herself in the span of 5 months. You may have noticed that I haven’t been posting a lot of recipes lately. Before I pull out the “It’s hard to blog regularly while having a full-time job!” card, I’ve got to admit that lately I’ve been making a lot of recipes from various vegan cookbooks and blogs as opposed to experimenting on my own. How to Eat Plant-Based while Traveling: Think Outside the Box!

Most people following a plant-based diet will agree: it’s the easiest to follow when we can cook all of our meals at home, in our own well-stocked kitchens. However, life interferes, and we may find ourselves stressing over food while getting ready to travel to a new destination that may or may not accommodate our veggie-oriented eating. As you know by now, earlier this month Rob and I moved from our 3+ year home in Alabama to the wild and woolly frontier just outside Seattle, WA. I’ve never been a fan of cutting corners. In fact, ‘taking the road less traveled’ has long been the story of my life… Okay, explaining this would require a different blog post – or a whole different blog – so today I’m just focusing on how (and why) this applies in the kitchen. The biggest reason for cooking at home a lot for me is the fact that it’s healthier. That’s a no-brainer: even vegan restaurants tend to use some ingredients that are far from doing us any good (like oil, fake meats, etc.), plus is there anyone reading this who lives in the land that’s robust with numerous vegan restaurants?
