Easy Vegan Waffles from Scratch

Whenever I see vegan waffles on the breakfast or brunch menu, I’m always tempted to order them. I’d love to make waffles at home all the time, but most waffle recipes are pretty labor-intensive. Recently I set out to develop an easy vegan waffles recipe of my own, and today I’m excited to share it with you!

When it comes to breakfast in my house, we usually go pretty low-key during the week – overnight oats, a slice of toast or a bagel do the job.

Once the weekends roll around, it’s a different story – bring on the fancy breakfast! Does this mean I want spend a lot of time making it? Nope!

Most Saturday mornings Rob and I do a 7 am boot camp with a group of friends, so we are starving by the time we get home. The quicker I can throw something together that still feels like a nice weekend-y breakfast, the better!

Enter my new easy vegan waffles – no eggs/milk/oil, etc., but a whole lotta flavor!

You may think that waffles from scratch are quite an elaborate undertaking, but trust me: these waffles can be put together in no time! Only 10-12 minutes pass between the moment when I start putting the ingredients in the bowl, and when the first waffle is ready.

Of course, teamwork rules here: Rob is the official waffle iron operator in our house, so while I fix the batter, he’s in charge of preheating the waffle iron and then baking the waffles.

We’ve had this simple waffle iron by Cuisinart for ages, and it seems to do a decent job However, I’ve been eyeing this gorgeous Belgian waffle maker that lets you cook two waffles at a time. To make these waffles in our current waffle iron, Rob set it on medium-high to heat up, and sprayed the iron plates lightly with avocado oil spray (there is no oil of any kind added to the batter).

Don’t have a waffle iron at home? You can use this exact recipe to make pancakes! They’ll take longer to cook since they are cooked one side at a time, but they’ll still be delicious!

Easy Vegan Waffles Recipe

Easy vegan waffles recipe - oil-free plant-based waffles recipe

An easy vegan waffles recipe that calls for easy-to-find ingredients and comes together in under 20 minutes. No oil added. Top with maple syrup, fresh berries, or any other toppings of choice.

Prep Time 8 minutes
Cook Time 10 minutes
Total Time 18 minutes

Ingredients

  • 1 Tbsp ground flax seed
  • 2 Tbsp water

Dry Ingredients:

Wet Ingredients:

  • 1 1/4 cup almond milk (plus 1-2 Tbsp if the batter gets too thick)
  • 1/4 c unsweetened applesauce
  • 1 Tbsp raw sugar
  • 1 tsp vanilla extract
  • Avocado oil spray, if needed for the waffle iron

To serve:

  • Toppings and syrup of choice (assorted fruit and berries, maple syrup, peanut butter, etc.)

Equipment:

Instructions

  1. Mix ground flax seed and water in a small cup, set aside to thicken.
  2. In a medium bowl, whisk together the dry ingredients until well mixed. In a large bowl, add all of the wet ingredients and whisk to combine.
  3. Add dry ingredients to the bowl of the wet, along with the flax seed. Mix with a spatula until just combined - a few lumps are okay.
  4. Preheat your waffle iron and cook the waffles according to the waffle iron manufacturer's directions. You may need to spray the plates of your iron with cooking spray to prevent sticking. We used about 1/2 cup of batter per waffle to yield 6 waffles.
  5. Serve with your favorite toppings. Enjoy!

Been cooking all my life and this recipe did not work..everything stuck yo my waffle iron and I coated it with oil,,dont know what happened

I absolutely love this recipe, I've been using it every Saturday morning for over two months. I use the Hamilton Beach rotator waffle iron and I haven't had any problems with the waffles sticking. I spray the avocado oil only on the first batch, and the rest don't even stick! Thank you fro this great recipe.

LOVED the flavor and the health aspect of these waffles but like another person posted, the waffles stuck onto the waffle iron regardless of the amount of spray I coated the maker with. I am using the Waring Pro Professional Waffle Maker. I will try as you suggested and lower the heat next time. Now I’m off to try and clean out the waffle iron ????

Does using white whole wheat flour make a difference and will it turn out as well if I use plain whole wheat flour?

Hi Bunny! Using regular whole wheat flour may make the waffles a bit denser. I actually use whole wheat pastry flour these days whenever I'm baking. If regular whole wheat flour is all you have, feel free to use it anyway, just use a bit less (like 1/2 cup), and add more regular white flour to make up for the difference in the flour amount.
