Hi all! Sorry for keeping silent here on the blog for the past few weeks: our baby daughter Juliana Mary was born on October 1st, and as you may suspect, our lives have changed forever! I’m still going through a major adjustment period, getting used to accomplishing  way less of my usual tasks during the day and sleeping in 2 or 3-hour increments at night. New Breakfast Recipe: Pumpkin-Carrot Pancakes

Hi all! Phew, the past couple days have been quite hectic over here: I’ve planned on publishing today’s post earlier in the week, but on Tuesday our landlady found out that the wiring in the house we’re renting from her has gotten pretty bad, so she turned the power off in the house and asked us to spend the night in a hotel. As it turned out, finding an available room at a hotel on Whidbey Island is not an easy feat on a Tuesday night during the off season (hotel attendants go home early). New Breakfast Recipe: Japanese Sweet Potato and Chia Pancakes

Strawberry-Banana Pancakes – Gluten-Free Vegan Breakfast

…Aaaand I’m back from Seattle! The trip went great, as you can probably tell from all of my previous posts, but the one thing I missed the most from home was my own, fully stocked kitchen! Needless to say that as soon as we returned, I started cooking up a storm, and my first creation was this breakfast – Strawberry-Banana Pancakes that can be made gluten-free: These pancakes go well with a glass of almond milk! What makes these pancakes gluten-free? The flour! The recipe calls for a combination of brown rice and oat flours. Brown rice flour doesn’t contain gluten naturally, and oat flour can be made gluten-free if you grind up some certified gluten-free old-fashioned oats in a food processor or a coffee grinder (I use the second one). Let’s agree: pancakes are the ultimate breakfast comfort food. Not many other breakfast dishes can compare with pancakes in versatility: they can be big, they can be small, they can be topped with maple syrup or honey or bananas or chocolate syrup, they can have chunks of fruit or chocolate/butterscotch/peanut butter chips baked into them – and that’s even before we dig into all the varieties of pancake batter!
