New Breakfast Recipe: Japanese Sweet Potato and Chia Pancakes

Follow my blog with Bloglovin Hi all! Another week flew by, so it’s time for an update on what’s happening in the Vegan Runner Eats headquarters. Before I proceed to tell you about the delicious vegan Japanese Sweet Potato and Chia Seed Pancakes, let me share with you the amazingly freeing running experience I had yesterday. You may remember from this post that I decided to stop running for a while in an attempt to give my left foot a chance to recover from plantar fasciitis. After not running for a couple months, I slowly started using a treadmill once or twice a week to run shorter distances – the treadmill belt is softer than asphalt, which provides less impact. 3 Easy DIY Tricks for Runners that Don’t Cost Anything and Help You Run More Comfortably

This time it’s going to be in our new home in Washington state where we’ve just moved. New races! New PRs (hopefully)! And one more … Read the rest of the post

Week 14 of Marathon Training: All is not Lost!

Week 14 of my marathon training plan also happened to be the first full week that we spent home after almost a month of being away (1 week vacation followed by 3-week-long trip to Seattle area). I was glad to be back to my old routine of blogging, cooking, running, and being amazed at how fast the time flies by when I’m busy! I’ve also managed to sell three sock monkey toys from my side business on Etsy (I sew classic Rockford Red Heel sock monkeys and other animals completely by hand and ship them anywhere in the world). Holidays are around the corner, so things are picking up on Etsy! The good news: my foot injury that I acquired in Seattle hasn’t bothered me since we returned home, so I was able to resume my marathon training! I mentioned in my previous post that I suspected my beat-up shoes were … Read the rest of the post
