Rock’n’Roll Seattle Marathon Training, Month 1: Preparing for Bigger Things to Come.

…And here we go: it’s time for the first update about my training for Rock’n’Roll Seattle Marathon that will be happening on June 13th, 2015! This is going to be the third marathon in my life, and the second one I’m going to tackle as a vegan. This time around, I’ll be updating you once a month about the progress in my training so that you could learn from all of my ups and downs – hopefully more ups than downs! You may remember that I started this blog over a year and a half ago as a way to document the training for my first all-vegan marathon in Pensacola, Fl in 2013 (my second 26.2 overall). You can read all of those posts over here. A lot has changed since then: when I first announced signing up for this marathon, I outlined 3 ways training for this marathon is … Read the rest of the post

Pawz by the Sea 5k Recap, Plus How I Managed to Beat My Anxiety

This past Sunday, I participated in a small local 5k called Pawz by the Sea, and surprised myself by finishing 3rd female overall! What was so surprising about it? Well, this was my first running race in months, and given my 2-month break from running over the summer to heal my plantar fasciitis, and the fact that I haven’t trained to run fast in a very long time, this was a pretty unexpected achievement. Another win in my book – taking part in this race helped me get control over anxiety that’s been plaguing me for a while now. I usually avoid talking about my emotional state here on the blog, but it would be unfair for me to make you believe that my day-to-day life is all roses and vegan cupcakes. I’ve been feeling overwhelmed in the past months with all of my commitments – a new job that … Read the rest of the post

The Quirks of Whidbey Island: Our Weekend Adventures, Plus The Traffic Light Lentil Stew Recipe

I can’t believe it’s been almost a month since we moved to the Washington state! Almost every day we get a chance to see how different the Pacific Northwest is from our previous home in the Southeastern US (Alabama, to be exact), and to be honest, we love it so far! From the overall laid-back, almost hippie vibe of Whidbey Island, our current dwelling, to the breathtaking views that open up every time you turn around the corner – it’s all worth experiencing in this lifetime. Right now the only drawback is that the weather is quite a bit cooler than what we’ve been used to living on the coast of the Gulf of Mexico, but at least I’ve been enjoying the fact that I don’t sweat like a sasquatch when I go running outside. Speaking of sasquatch… We see this guy every day passing by Bailey’s Corner, a very laid-back community … Read the rest of the post

We’re in Washington! Or How We Survived a Move Across the Country without Cheating on Our Plant-Based Diet.

I’m so excited to finally write a blog post from our new home in Washington state! After packing our belongings in Alabama and shipping them on the first weekend of April, then driving to New Orleans to spend two days in a hotel, followed by flying to Seattle and clocking in even more hotel time while searching for a house to live in – we’ve finally moved into our new place on Whidbey Island, WA. As of Monday morning, Rob started his new job, and I am able to update you about our whereabouts – as long as the pitifully slow internet connection allows that (the local telecom company is supposed to relieve my suffering sometime this week). Let me tell you: Whidbey Island is absolutely stunning! After spending almost eight years in mostly flat Northwest Florida and South Alabama (biggest attraction – the beach) where we ran out of things to do … Read the rest of the post
